Raw Vitamin C & Ginger Slice (Recipe)

A zesty slice filled with energy-boosting ingredients, including our favorite Vitamin C powder!

BASE

  • 1/2 cup almonds
  • 1/2 cup medjool dates
  • 2 tbsp coconut oil

GINGER LAYER

  • 2 cups soaked cashews
  • 1/4 cup coconut cream
  • 3 tbsp Vitamin C
  • 2 tsp ground ginger
  • 2 tbsp pure maple syrup

LEMON LAYER

  • 2 tbsp coconut oil
  • 3 tbsp coconut cream
  • Juice of 1 lemon

What to do

  1. Create the base first by combining almonds, medjool dates & coconut oil in the food processor and process into the sticky crumble. Press the base mixture into a small lined slice tin. Place in the freezer to set.
  2. Next the Ginger Layer by combining soaked cashews, coconut cream, vitamin C powder, ground ginger, and rice malt syrup into a clean food processor and process until smooth and creamy. Pour this layer over the base, spread evenly, and return to the freezer for an hour or so.
  3. Combine the lemon layer in a bowl and spread evenly as the final layer on your slice. Return to the freezer and allow to set for 2-3 hours.
